Heat Forces Italy's Wine Makers to Pick Earlier, Work Nights

Italy's Franciacorta sparkling wine region began its harvest on Aug. 2—a full 10 days ahead of schedule and roughly a month earlier than it did three decades ago. The cause is stark: weeks of temperatures reaching 37 to 38 degrees Celsius (99 to 100 degrees Fahrenheit) combined with below-average rainfall have compressed the growing season, forcing winemakers to make rapid decisions with minimal margin for error.

Berlucchi, Franciacorta's oldest producer and the region's largest, now operates up to 24 presses daily—often late into the night—to process grapes before heat damage compromises quality. The company produces about 4 million bottles annually, roughly 20% of the Franciacorta consortium's total output of 20 million bottles. About 90% are sold domestically in Italy, with the remainder exported to Germany, Switzerland, the United States, and Japan.

The Challenge of Precision Timing

The early harvest presents a unique operational problem. Champagne-style sparkling wines require a delicate balance of high fixed acidity, low pH, and lower sugars—a chemistry that shifts rapidly as temperatures spike. "Early-ripening varieties such as Chardonnay require great care, because a delay of just a couple of days can leave you with grapes unsuitable for sparkling wine," said Attilio Scienza, professor emeritus at the University of Milan. "Sugar rises too quickly and acidity falls too quickly."

Berlucchi CEO Arturo Ziliani acknowledged the strain. "These are delicate, frantic moments, and everything has to work perfectly," he said. Even in late July, the company was targeting an Aug. 10 harvest date, but rapidly rising sugar levels in Pinot Nero grapes signaled readiness within two days. Workers were mobilized and presses readied on short notice.

Regional labor rules prohibit work between 12:30 p.m. and 4 p.m. due to extreme midday heat, but afternoon shifts proved impractical regardless. Berlucchi responded by beginning harvest at 4 a.m., with workers picking under floodlights to race against the clock. "The grapes are perfectly healthy," said Ferdinando Dell'aquila, Berlucchi's technical director. "We just have to work as quickly as possible, harvest them and preserve their acidity."

Once picked, grapes must be cooled before gentle pressing in stainless steel machines—a step that cannot be rushed if producers want to extract the highest quality free-run juice, which is foundational to sparkling wine quality.

A Regional and Continental Shift

Franciacorta isn't alone. Sicily began harvesting still wines in late July. Parts of Tuscany started early as well, along with most sparkling wine regions across Europe. The pattern reflects broader climate pressures affecting the continent's wine industry.

"Climate change and the African weather systems settling over Europe are bringing extraordinary temperatures and forcing early picking, not only in Italy, but also in France and Germany," said Paolo Castelletti, secretary general of the Italian Wine Union. Castelletti emphasized that quality need not suffer if producers adapt their operations. "A good oenologist can manage situations like this. I can say with confidence that wine quality is not compromised. It simply requires a different organization of work than in past years."

Winemakers across regions now face a new operational reality: monitoring fields even earlier to identify the optimal harvest window. The margin for error has narrowed considerably. What once allowed for a more leisurely approach to harvest timing now demands real-time decision-making and the ability to mobilize labor and equipment on compressed schedules.

Berlucchi's experience illustrates both the challenge and the adaptive capacity of established producers. The company, whose father Franco Ziliani and estate owner Guido Berlucchi pioneered the classic sparkling wine method in Franciacorta decades ago, has the scale and infrastructure to absorb these disruptions. Smaller producers may face greater difficulty absorbing the operational costs of nighttime harvests and accelerated processing schedules.

Why This Matters:

Early harvests driven by extreme weather represent a significant operational and economic adjustment for Europe's wine industry. For Franciacorta specifically, the shift demands higher labor costs, accelerated capital deployment, and tighter coordination—expenses that compress margins unless producers can maintain pricing power. The region's dependence on export markets (10% of production) means currency fluctuations and trade conditions will influence whether producers can pass costs to consumers. More broadly, the trend underscores how private enterprise must continuously adapt to external conditions, whether climate-driven or regulatory. Producers like Berlucchi demonstrate that market-driven adaptation—investing in equipment, hiring flexible labor, and adjusting workflows—remains the primary mechanism for managing disruption. Government's role remains limited to enforcing labor rules and maintaining the regulatory framework that protects the Franciacorta designation itself. The real test lies in whether producers can sustain profitability while absorbing these new operational realities.
